In our quest to expand our range of organic teas, high-mountain terroirs are a bit more of challenge as few high-mountain growers venture down that path. We’ve always struggled when seeking high-mountain offerings, especially good ones – until we’ve found this grower/producer’s offerings! This is our fifth year working with this family and we look forward to many years of collaboration as the quality of the leaf material, as well as the processing of it into tea, is of first grade. This tea is our best value in organic high-mountain teas. This Jin Xuan varietal tea from Meishan comes from a well-established growing area which was one of the first to grow higher mountain teas in central Taiwan, before Shanlinxi and Alishan became references. This terroir in Yunlin County is particularly deserving of a closer attention. Jin Xuan fares particularly well in these beautiful mid-range hills and this tea is a very good example of how this strand has contributed to the characteristic high mountain oolong taste. It has the typical green, crisp pastoral notes with hints of mountain flowers that charms the nose. The palate will immediately be pleased by the ample creamy texture and taste that evokes fresh buttered green beans with hints of sweetness. All in all, it is a very satisfying cup that bears the characteristic generous qualities of high mountain teas at a very affordable price.

The name Jin Xuan refers to a specific tea varietal developed by the Taiwan Research and Experiment Station which is the national research centre dedicated to the improvement of the tea industry of Taiwan. More specifically, this strand was elaborated by Dr. Zhen Zhe Wu who is considered the father of the modern Taiwanese tea industry. Jin Xuan was released for commercial cultivation in 1981 after 21 long years of development. This hardy strand is one of the most widely used as it adapts well to a variety of growing conditions from lower level plantations to high mountain ones. It is also very popular for its aromatic and taste characteristics. More specifically, teas elaborated with Jin Xuan leaves has a particularly creamy texture with a distinctive milky smoothness and sweetness. In the last 20 years, producers have tailored their techniques to emphasize this milky characteristic in response to the popular demand to the extent of sometimes artificially enhancing this flavour (which is not the case here!).

This is just a lovely oolong! The floral notes are stronger on the first steeps (35s, 40s, 45s,50s,55s, 1min) as you would expect but the loveliest surprise is when you get to the longer steeps (1 min 20s, 1min 40s, 2mins, 2 mins 30s, 3 mins, 3mins 30s) you get a wonderful intensity of the back of the throat sweetness and even a surprising almost saltiness on the edges of the tongue. I got this as an experiment and I am VERY glad I did!
