This tea was already a stellar one from a stellar season when we purchased it this last spring 2020. Its clean, well-balanced taste was simply enchanting and addictive. Its thick generous leaves showed great promise if left to mature one full season for the purpose of baking it. This is the last remaining batch was kept just for that purpose. The seal was broken this October 2020 for evaluation and revealed an even more generous palate of heady floral notes and a creamier texture making it a perfect candidate for a slow multi-stage baking process. The excellent spring season we had for high mountain teas also heightened our expectations. Something also needs to be said about working with organic teas for that purpose: they simply give the best results which, in this case, is one of the most balanced baked teas that we’ve made. It is sweet, heady and thick with clearly defined crispness that we can only describe as “clean”. This tea was first introduced in 2014 as a very limited Lot 385 introduced in our Special Reserve Section where teas of distinction are kept in the catalogue to be shared and experienced by all. All of the teas we propose here make perfect candidates for further ageing. This Lot 952 is very limited in stock. Get some while it lasts!

You probably never heard of the Shibi tea producing area before now but you might have already experienced drinking some tea coming from there if you already appreciate Alishan or Shanlinxi High-Mountain Oolong Teas. Very often Shibi teas are sold under these designations. Whether this is a legitimate practice or not is not what we wish to debate here, but it still remains a fact. It is true that the Shibi Township lies somewhat between both famous terroirs. Nonetheless, we think it deserves to shine by its own, especially when it involves promoting the good work of Mr. Chen, our long-time collaborator who is also responsible for our Organic High Mountain GABA Oolong and the Organic Shibi High Mountain Oolong Tea. This particular tea is a baked tea of the later offering and involves Yuwen’s skills as a Master Tea Baker to bring out all the savoury goodness Mr. Chen’s leaves have to offer. As is customary, Yuwen will work with a tea that’s been allowed to mellow for at least one full season. her preference always goes to work with a spring tea and bake it in the last months of the same year. Lot 1291 was baked in the last days of November 2023. The first sips are smooth and delicate with a biscuity sweetness that invites the second cup. The baking does not hide the natural floral notes and the crisp pastoral freshness that are further supported by the sweet mellow finish reminiscent of a creamy custard. Clean is also the word that comes to mind when you sip a cup, or many, as this tea is quite inviting to indulgence. Rarely do we mention it, but this tea is also “clean” in the strict definition of the word. It comes from a garden that observes farming practices to meet the new EU norm for low pesticide use: one of the most stringent norm of the kind right now. Another good reason to indulge!
