With all the frantic activity that surrounds the making of fresh new teas in the springtime and wintertime, it is always easy to overlook the importance of the cooler seasons for the best flowers for tea scenting. After-all, if spring is reputed for its highly fragrant teas it makes equal sense that the most fragrant roses would be available then as well. The same is true for the sought after fragrant sweetness of late winter teas. Our Rose oolong is prepared by choosing the freshest organic flowers from the 1st and 2nd day of a new seasonal bloom. These are the most fragrant buds which will render our tea a beautifully balanced and soothing floral aroma as well as a sensual violet hue to the liquor. Roses render a beautifully voluptuous and heady sweetness to the cup which further accentuates the natural aromatic characteristics of the organic Jin Xuan varietal tea used as a base for this blend. This Lot 1209 features a new pairing of Jin Xuan tea sourced from one of long time collaborators and neighbour which was lightly baked before scenting to help bring out the natural creamy sweetness of the Jin Xuan cultivar to act as a foundation to the heady aromatics of the fresh spring roses. The tea is then laid to rest in successive layers of tea and rose petals until they have rendered all their scent. The petals are then completely removed from the tea as they might sour the taste of the tea with time. A portion of the removed petals is then dried and put back into the tea as decoration only. in the end, this tea delivers a beautiful balance of good body and lingering presence with soothing ethereal notes. A classic, eternal favorite that can be enjoyed hot or iced.

Naturally scenting teas with fresh flowers is an ancient tradition in Taiwan which goes back to when tea was first planted on the island, and even further when considering the practice on the continent. In the same spirit, our family has been perpetuating this craft for over 3 generations now. As opposed to the more common green or white teas used for scenting, we choose to work with the already aromatic and expressive oolong and black teas that grow in our neighboring townships which are natural choices for scenting. Our flowers are also sourced locally and delivered to us just after morning picking for optimum freshness and fragrance. Then, we carefully blend in the flowers with the tea at the dawn of the day, when they are in full bloom and at the peak of their perfume. The tea and flowers are given a full night to consume their fragrant union. The morning after, flowers are then removed from the tea, one by one, before they turn sour and dull the taste. If required, the operation is repeated until the desired balance of scent is achieved. Timing and skill are of essence in obtaining the perfect blend.
